I’m sometimes amazed at the reaction of people when they see the amount of butter I eat. It’s as if they are disturbed by what seems me pigging out. While they’re busy avoiding it like the plague, I slather it on and eat it like cheese, especially if local organic. Once they realize, hmmm… if she can eat that much and not be overweight, maybe I can too. One morning at a restaurant I ate the butter of three people. However, once I explained how good it was for us they asked for more. It was pure, guilt free indulgence for them.

If butter, coconut (and oil), avocados and raw nuts were fattening, I’d be fatter than fat. But, because I eat more fat than sugar and white carbs (bread and pasta), I’m not! It’s not that I don’t like these types of food, it’s how they make me look and feel. And since they are highly addictive, these are what I try to avoid like the plague.

Perhaps there are different reasons why many switched to margarine – for some, it may have been for what they believed improved health, for others cost, and for all I’m sure because it is easier to spread on toast. Another convenience gone wrong. Thankfully though, more people are reading labels and becoming privy to processed foods. Because of that, gone are the days of butter bashing, and butter consumption has now hit a 40 year high. The following quote from my book sums it up rather well. Eugene Arnold, M.Ed., M.D.; a Professor Emeritus of Psychiatry at Ohio State University writes:

”Do you know the difference between margarine and butter?”

*Both have the same amount of calories.

*Butter is slightly higher in saturated fats at eight grams compared to five grams.

*Eating margarine can increase heart disease in women by 53% over eating the same amount of butter, according to a recent Harvard Medical Study.

*Eating butter increases the absorption of many other nutrients in other foods.

*Butter has many nutritional benefits where margarine has a few only because they are added!

*For most people, butter tastes better than margarine and it can enhance the flavors of other foods. (The best flavor claim margarine can make in ads is that it tastes the same as butter.)

*Butter has been around for centuries where margarine has been around for less than 100 years.

”And now, for Margarine…

* Very high in trans-fatty acids.

*Triple risk of coronary heart disease.

*Increases total cholesterol and LDL (this is the bad cholesterol)
* Lowers HDL cholesterol, (the good cholesterol).

* Increases the risk of cancers by up to fivefold.

* Lowers quality of breast milk.

* Decreases immune response.

* Decreases insulin response.

”And here is the part that is very interesting! Margarine is but ONE MOLECULE away from being PLASTIC. This fact alone was enough to have me avoiding margarine for life and anything else that is hydrogenated (this means hydrogen is added, changing the molecular structure of the substance).

”You can try this yourself: purchase a tub of margarine and leave it in your garage or shaded area. Within a couple of days you will note a couple of things: no flies, not even those pesky fruit flies will go near it (that should tell you something). It does not rot or smell differently. Nothing will grow on it – not even those teeny weeny microorganisms will find a home to grow. Why? Because it is nearly plastic.

May this convince those still eating margarine to make the switch back to butter. And for those kids who have never tried, they’re in for a real treat. I agree that butter can be more costly than the man made stuff, but the price tag for margarine will be your life. Should you decide to eat butter, organic is best.
